Butter Wilted Spinach



Today I woke up, and promptly made a small pot of coffee. I actually need to pick up some coffee filters, as I have forgotten to do so for the last couple of trips to the grocery store. I spent my morning sipping my coffee, trying to psych myself out in order to revisit, and possibly rework my resume. I couldn't be more exhausted and frustrated by my full time job search. "There is something fishy going on", I think to myself, but I can't quite pinpoint it. I decided while I agonized over my resume that I would make a delicious meal today. I'm pretty sure every day I decide to make a delicious meal. The more delicious the meal is, the more I believe in spite of my underemployment I am actually good at something.

I found some really beautiful spinach at the Wild Olive Market in Harlem, and wilted it in chopped garlic and butter. I also made a shrimp linguine tossed in a garlic and lemon alfredo sauce as my main dish. I listened to Amy Winehouse Frank, and a few tracks from Rick Ross's new mix tape, Rich Forever while I cooked. It came out really tasty, and is a nice complement to the fabulous vegetarian lasagna I made 2 nights ago. It looks like it's Italian Food Week until I run out of cheeses...

It wasn't my intention, but it seems like this is turning into a blog about food.

Shopping.

I'm like a car...learning to carry half my body weight across two boroughs and making it home in one piece.

My Granny's Gumbo

Shrimp, chicken, and Tilapia gumbo. The roux is the hardest part. It was touch and go there for a minute, but it came out really tasty.
